I didn't really see that until klingsor pointed it out, mistaking it for part of the setup.

She's holding a safety device in her left hand. I think if she drops it it's a signal to stop immediately and render aid. Her head is covered, so all the usual "stop" signals are covered. Correct?

Yes, I agree that it should have been filmed in such a way that it would have been more out of sight...but I guess for safety. I didn't watch the part where they discussed safe signals .

It's quite common in these waterboarding scenes for the performer to get hold of an object that she drops when she's in real trouble. If she even loses consciousness, the object will also fall down and you can interrupt the torture.
