Yeah, the first thing I checked was how taut her arms were. At the end of the video, he releases the tension and that's when it becomes apparent that she really was stretched pretty tight on the apparatus. Her whole body relaxes.

Yep, that's a fine point that sometimes is overlooked by the newbie GIMPer. Actually stretched tautly (or to "torture" specs) is a nice detail. You can sometimes tell by if her hands become discolored (purplish) by the strain on her arms/wrists/body. Just another detail. Another cool thing that Ogre (Dungeoncorp) used to do with his racked girls, was lift them under the waist to make sure there wasn't any "stiction", and that they were fully stretched.
When you're stretching someone slowly, stiction (between her skin and the rack surface) can interfere with the extent of the stretching. This also may have prevented injury by allowing for a more gradual, linear stretching of the ligaments, tendons and joints.
I don't think this would be so much a problem with the wood surfaces found on medieval racks, though. Just the newer leatherette type surfaces.

Yes, slightly bent elbows are a dead giveaway, and so are bent knees. Also the ropes/cuffs/manacles on the wrists will force the hands off to an angle under tension. The best indication of proper stretching is, of course, seeing a few inches of unbroken daylight between her back and the rack's surface.
